OUR FOOD ETHOS
Our food ethos is influenced by our love for the land and the Fitzgerald family farming heritage. We have a simple philosophy of working with local seasonal ingredients, respecting the natural flavours in every dish our talented team of chefs create. Our ingredients are sourced from our own certified organic farm and Mary’s Organic Garden which forms part of the Woodlands Walking Trail. We also source from a small number of trusted local producers who invest the same care and attention into their production techniques as we do. We take the time to get to know them and personally visit their premises.
Our commitment to local ingredients has earned our popular Timmy Macs Bistro Guaranteed Irish status, while Fieldings of Adare showcases our own-grown ingredients and those of trusted local suppliers. The resort is accredited by Good Food Ireland and is included in the Best Places to Stay and Best Places to Eat sections of Ireland’s leading independent food and hospitality guide, Georgina Campbell’s Ireland.
