Mary's Organic Garden
From a farming family, Dick Fitzgerald started his farm life firstly in his native county Kerry and later here in the 40 acres where you now stand. His craft was growing potatoes, strawberries and Brussels sprouts. After he married Mary in 1973, they established a 4 bedroomed bed and breakfast. Over time this evolved into the hotel & spa that hosts you today. Alas, as the hotel grew, there was little time to enjoy farming. In recent years, before his untimely passing, Dick had started to keep a few cattle again. After his passing, Mary created this beautiful organic garden in his memory. Our garden boasts so many leaves which are all used lovingly in our salads. The taste and texture is a class apart. The mint for your mojitos is also cultivated with passion here in our own garden. We are blessed to have organic produce for you and all of our guests on our menus all year round in Timmy Mac’s Bistro and in Fieldings of Adare restaurant. With so much talk of carbon miles, this is the essence of From Farm to Fork. This is real organic food at its best direct from our garden to you. If we can’t grow it, we are very careful about partnering with the best food producers who share the same love of good food that we do and that you as our guest deserve. We are certified by the Irish Organic Association.

Our philosophy is to work with seasonal ingredients respecting their natural flavours. We have a selection of organic wines to compliment each dish. Dress code for dining is smart-casual please. Last dining time for parties with children is 7.30 p.m. Dine at one of the finest Limerick Hotels around, Fitzgeralds Woodlands House Hotel & Spa.
